It's referred to as a "mud vein", Bob. Shrimp and lobster have
one too.
Craw dads live and get their food from the muck at the bottom of
the bayou. I'm not an expert on their anatomy, but the vein acts as
a filtering system.
Before they are boiled, craw dads are placed in saltwater, which
makes them belch a lot of the mud out of their system. It looks as
gross as it sounds, but man, are they good eatin'!
