Unless you're planning on a thermometer for inside the computer case,
why not have it come in on a serial line? Isolate all the hardware
interfaceing to a microcontroller; there are quite a few microcontrollers
that have the A->D conversion & Serial ports (including those
useable for multi-drop) built in.

I've no direct experience with this as yet, but have read about it as
much as I could.
