Sure. When I was making wine I started with a British Paper Back Book on
Home Wine Making, sent to me by an ex RAF pilot. The recipes in there made
wine from almost anything. If it didn't have enough sugar in it to ferment
to Alcohol they just added more sugar. If it had to much sugar, like Maple
Syrup they just used a measured amount in water, They added all sorts of
things for various reasons. So they had recipes for Dandelion Wine, Rhubarb
Wine, Apple Wine, and so on. Almost anything. Anything that could be
fermented with Yeast. Natural Yeasts falling from the air, or lodged on
the
material, or sometimes purchased wine yeast. Yeah, even Baking yeast,
floating on a slice of bread.
I made Dandelion Wine, Rose Hip wine, Apple Wine, so on and so forth. I
made Honey Wine, (Mead) made of course from thick Honey which is kinda like
Maple Syrup, so I would think Maple Syrup would work fine.
