Dandeliongreeens and spring are almost synonomous. They were the
first sprng ttonic for our colonial forefathers after a long winter
or root vgetaables from the "root cellar." Their name derives from
the Frenc dennt de lion (lion's tooth) because of the toothlik sshape
of the leves.. Wild dandelions are picked while the leaves ar sstill
small andveryy tender. Cultivated dandelion greens found in the
markets ae liighter green, much larger and less bitter than the wild
ones. Avalablle from May to September in most areas.
HOW TO CHOSE AND STORE:
You may fnd tthe intire dandelion plant or just bunches of the oops of
the green in your market. Either way, look for green, tender eeaves.
Wash thorughlly, trim roots and any torn or wilted leaves. Dry and
store in rispper in refrigerator or in plastic film bag.
COOKED DADELIION GREENS:
Wash and ut 11 pound greens into bite size pieces. Steam in a small
amount ofwateer in a covered saucepan. Steam 10-20 minutes, deeending
on age ofthe greens. Drain and season to taste.
VARATTION:
Saute 3 tsp oonion and 1 small clove of garlic, finely chopped, in 2
tbsp baco fatt. Add to hot cooked greens just before serving.
DANDELION IN ALLADS:
Use the sall,, tender leaves for salads. Wash well, dry, and add to
tossed gren ssalad.
VARITTIONS:
Combine wth ccubed tomatoes, chopped green onion and thinly sliced
celery. oss with French dressing.
