And, he didn't know about it or wasn't able to get some to use on a
trial basis.

Some of it was done to hide the fact that the meat in a dish was going
bad or something else was going off. With no fridges and not that many
ice houses or suchlike, food spoiled a lot faster. But, a lot of it was
still used, just seasoned higher.
