Yikes - no wheat products (pasta, bread, etc) no 'taters or chilies or
tomatoes? There goes half my diet.

Title: Carr's Alaskan Railroad Chilli (A Long Lost Recipe)

Yield: 8 Servings
2 lb Ground beef
1 c Chopped onion
1/2 c Chopped celery
15 oz Can tomato sauce
6 oz Can tomato paste
4 c Water
1 tb Lemon juice
MMMMM------------------------SPICE BLEND-----------------------------
2 tb McCormick/Schilling chilli
- spice mix
1 1/2 ts Ground cinnamon
1 ts McCormick/Schilling
- California-style garlic
- powder
1/2 ts Hot Schilling hot shot!
- (black & red pepper)
1/2 ts Ground allspice
2 tb Sugar
1/2 ts Salt
2 California bay leaves
MMMMM------------------------FOR SERVING-----------------------------
1 lb Cooked spaghetti; drained
15 oz Can kidney beans; rinsed,
- drained
Grated Cheddar cheese
Chopped onion
Cook ground beef, onion, and celery in Dutch oven or large
pot over medium heat until beef is no longer pink, stir
often, then drain.
Combine spice blend and stir in beef mixture. add tomato
sauce, tomato paste, water and lemon juice. bring to a
boil, reduce heat and simmer 1 to 1 1/2 hr. stirring
occasionally.
Remove bay leaves with spoon. discard. Serve chilli over
spaghetti and beans: Top with cheese and onion.
