      Title: Beef w/Grean Beans - Stephen Yan
 Categories: Chinese, Beef, Vegetable, Oriental, Yan
      Yield: 4 Servings
 
      1 lb Beans; green, fresh, cut
           -diagonally in 2" lengths
      1 md Onion; cut in sections or
           -wedges
      1 T  Ginger; minced
      1 ts Garlic; minced
      2    Celery; stalks, cut in
           -diagonal slices
      2 T  Sauce; oyster
    1/2 ts Sugar
        ds Pepper
    1/2 lb Beef; flank, steak, slice
           -thin across grain
      1 T  To 2 T, sauce; soy, light
        dr Oil; sesame, a few drops
      1 T  Tapioca starch
      1 ts Wine; cooking
      4 T  Oil; peanut, divided
    1/4 c  Water
 
  1. Marinate beef with wine, starch, light soy sauce, oyster sauce,
  pepper, sugar and sesame oil for a few minutes.
  
  2. In a hot wok, add 2 tablespoonful of peanut oil. When smoke begins
  to rise, put in the vegetables, salt and saute for a few seconds.
  Then add 1/4 cup of water and cover with a lid. Cook with HIGH heat
  for 3 minutes until smoke escapes from lid. When done, remove to a
  plate and dry the wok.
  
  3. Return the wok to the heat and when the wok is hot, add 2
  tablespoonful of peanut oil, then ginger, garlic and onion. Saute for
  a few seconds, then add beef and stir fry until the meat changes into
  cooked color. Return vegetables, mix well and serve hot.
