Doris, when I bought coffee in 1-lb tins, I was much more interested
in making cheese than bread; so I never really had to contend with
that problem. Come to think of it, the tins I saw used for breadmaking
had no paint at all - they were simply unadorned metal.
And the bigger tins are too valuable as canisters to use to make
doughy bread. :-)

Lemmee see - I need large tins for mouseproof storage of beans and
corn and other seeds. For items stored upstairs, I much prefer glass
for storage. Hmmmmm, I can see where apartment dwellers have a
problem. :-)
