Except when you're not, like in a Super Cub on floats. Nice, big, windows on
either side (tandem seating) and a windshield. About the only directions you
don't have a great view is behind and over you (and some planes have been
modified to put a transparent ceiling in them).

Got 300 or 400 or more of them that day. Easily taken care of. I only keep a
weeks worth of messages, so...download, exit, enter newsgroup again. Software
looks at dates of messages and tosses anything over a week old.

Title: Bread Stuffing with Kumquats & Grapefruit Juice

Yield: 3 cups
2 tb Butter
1 Yellow onion(s), diced
2 Garlic clove(s), minced
1 c Celery, chopped
1 ts Thyme, minced
1/2 c Grapefruit juice
(about 1/2 grapefruit)
2 c Kumquats, finely chopped
(about 10 kumquats)
1/2 c Vegetable, chicken,
Or beef stock
4 c Stale bread
Pref from a baguette
Cut in 1" cubes
1 Egg
1/2 c Parsley, coarsely chopped
Salt and pepper
In a skillet over medium heat, melt the butter. When it foams, add the
onion, garlic, celery, and thyme and saute until the onion is
translucent and the celery is tender, about 10 min.
Meanwhile, combine the grapefruit juice, kumquats, and stock in a
saucepan and bring to a boil; remove from the heat. Place the bread
in a bowl and pour the hot liquid over it. Let stand for 5 min. Add
the sauteed vegetables, egg, parsley. salt and pepper and mix
thoroughly.
Preheat the oven to 350 F. Place the stuffing a small baking dish and
bake until the top is golden brown and crunchy, about 15 min.
This also makes a delicious snack.
