No problem, if you have the money.
The expensive part is the A/D converting and the interface to the computer, 
modern hard disks are fast enough and relatively inexpensive.
You can calculate that yourself: for one 16 bit / 44.1 kHz / mono track, you 
need 75 kBytes/sec troughput.
