It sounds like what you want is LSET.  As in:
   TYPE Hobbit
     Name as string * 5
     Height as integer
   END TYPE
   DIM Frodo as Hobbit
   AString$ = "Frodo" + chr$(3, 0)
   LSET Frodo = AString$
