I just learned something interesting:

China 200,000
Hungary 65,000
North America 50,000
Zimbabwe 23,000

South Africa 11,000
Slovenia 6,100
Spain 6,000
Israel 2,600

China is huge. North America was a surprise to me. Slovenia and
Spain are both relatively small players.

If Slovenia produces a total of 6100 tonnes, how can one single
Chinese trading company sell 7000 tonnes of Slovenian paprika a year?

      Title: Dandelion and Sorrel Salad with Paprika Stars
 Categories: Salads, Wild, Croutons
      Yield: 8 Servings
 
           FOR THE STARS:
      4 sl Homemade white bread
      2 tb Olive oil
    1/8 ts Paprika
           FOR THE DRESSING:
      1 tb Raspberry vinegar
      2 ts Water
    1/4 ts Sugar
      3 tb Extra-virgin olive oil
           FOR THE SALAD:
      5 c  Lightly packed small tender
           -dandelion greens and
      3 c  Lightly packed sorrel leaves
           -rinsed and spun dry
 
  Make the stars: Cut out as many stars as possible from the bread
  with a small star-shaped cutter, in a skillet cook them in the oil
  over moderately low heat, turning them, until they are golden, and
  in a small bowl toss them with paprika and salt and pepper to
  taste.
  
  Make the dressing: In a large bowl whisk together the vinegar, the
  water, the sugar, and salt and pepper to taste, add the oil in a
  stream, whisking, and whisk the dressing until it is emulsified.
  
  Add the dandelion greens, the sorrel leaves, and the stars to the bowl and
  toss the salad well.
