I tried replying to this once, but the editor ate it..  It had 
good taste.  This is something I made for a food booth last year.  It 
vanished.  It's from the Yucatan region.
Pastel de Calabacitas [Squash Cake]
1/2lb. [1/4kg] butter
1/2 cup [35g] sugar
4 eggs
1/2 lb. [225g] flour
2 teaspoons [15g] baking powder
14 oz [400g] canned sweetened condensed milk
 pound [450g] zucchini, sliced
5 TB [75g] raisins
2 cups [320g] candied fruit or dried fruit
2 cups [450ml] whipping cream
Mix the butter with sugar until creamy.  Beat eggs into butter, one at a 
time. 
 Sift in flour, baking powder, and add milk, beating the whole time.  Add the 
squash, raisins and fruit.
Put half in one cake mold [greased and floured springform works fine] and 
half 
in another.  Bake in a 392F [200C] oven for 35 to 40 minutes.  
Cool and put one half on a plate.  Top with the cream, whipped, and then the 
other half of the cake.  If you have only one cake mold, the whole thing can 
be baked,and then sliced in half to add the whipped cream filling.
Cover the top with whipped cream. Add candied fruit if desired.
This recipe comes from a Yucatan Penninsula cookbook, and the typos are all 
mine.:)
