"Carbs" as you put it contain protein.
The following meal
   2 oz vermicelli
   1/2 cup vegetable primavera sauce
   2/3 cup steamed mixed vegetables
   2 slices light whole wheat bread
   1/2 cup three bean salad
   8 ounces of skim milk
   1 medium apple
contains 26 grams of protein (661 calories, 3 grams of fat, 139 grams of
carbohydrates and 26 grams of dietary fiber).  That is approximately 1/2 
of the recommended daily allowance of protein for a 165 pound adult male.
If the guy is extremely active, you can double those servings.  He will burn
the carbohydrates . . . and flush surplus protein down the commode.
Most "sport nutrition" books and articles, including "The Zone," are written
for serious atheletes (like the pros) who are in their twenties.  They also
tend toward fad diets that will be passe in a year or two.  Most of us, if we
followed their advice would swell up like blimps or rather like hogs. And
that I know to be true for at least one 59 year old bicyclist who rides 5 to
6 thousand miles a year and works out regularly.
