To start you can either find a pre-vet school and go.. or you can start
by volunteering to work with a vet, meaning no money or very little
money. Large animal vet tech can be a nasty job especially depending on
the vet (they're not all great or even good).
 
frankly I wouldn't work around cattle.. I have and I don't care for it
anymore.. best bet would be to find a horse doctor *not* large animal.
