Title: French Dressing
Categories: Sauces, Salads, German
Yield: 4 Servings
1 ts Salt
1/4 ts Celery salt
1 ts Strong french Mustard
4 tb Wine vinegar
1/2 ts Sugar
7 tb Oil
2 tb Tarragon leaves; chopped
1 tb Lovage leaves *
1 tb Pickled sharp gherkins
2 tb Mushroom cheese **
1 tb Capers
2 Hard boiled yolks
4 tb Cream
NB * Lovage is similar to wild celery. Substitute celery leaves.
** This is a mushroom flavoured processed cheese.
Chop finely the tarragon with the lovage leaves, as well as the
gherkins and capers. Push the yolk through a sieve. Mix all together
very thoroughly.

Title: Roquefort Dressing
Categories: Sauces, Salads, German
Yield: 4 Servings
1 ts Salt
1 ts White pepper
6 tb Cream
6 tb Oil
1 tb Roquefort Cheese
1 ds Lemon juice
Press the roquefort cheese through a sieve. Blend all together till
smooth. If it's too thick, dilute with a little water.
