How about (non-legume) crops which can fix nitrogen from the atmosphere,
saving the cost of fertilizer in third world countries and reducing run-off
pollution everywhere?  How about rice with a high protein content?  How
about crops more resistant to disease or pests, requiring less introduction
of insecticides and fungicides into the environment.  There are LOTS of
reasons and, yes, someone should earn money for the work.
