I have had people try to explain this argument to me. It isn't very
satisfying. Bear in mind that I am a confirmed atheist (am I allowed to say
that here?:).

I think one of should read Davies' book before we get much further into
this argument, but I can assure you (from radio interviews that I have
heard) that Paul Davies is not some some ratbag extracting whatever
evidence he can to support some Belief. He may be totally wrong (I think he
is), but his (unread) argument and your conter-argument above seem equally
presumptious to me.
