I have done that.  
I can also find out by reading the Arizona Statutes, which I have. 
Uninsured Motorist coverage is in ARS 20-259.01, subsection E.  It
states, "'Uninsured Motorist coverage', subject to the terms and
conditions of that coverage, means coverage for damages due to bodily
injury or death if the motor vehicle that caused the bodily injury or
death is not insured by a motor vehicle liability policy that contains
at least the limits prescribed in section 28-1170."  (28-1170 includes
the dollar amounts of coverage required by state law.) 
Under Subsection D of the same ARS (ARS 20-259.1) is stated,
"'Uninsured motor vehicles', subject ot terms and conditions of that
coverage includes any insured motor vehicle if the liability insurer of
the vehicle is uable to make payment on the liability of its insured,
within the limits of the coverage, because of insolvency."
I am actually more concerned that the person(s) that caused the
accident(s) is just given a ticket and then is free to go on about
their business, hoping not to get caught again.  Nothing is done to
prevent that same person from having another accident on the way home
from this one.  I would like to see the vehicle impounded, on the spot,
for anyone causing and accident and not a valid drivers license, valid
registration and/or insurance as required by law.
