Here is recipe that I have made in the past and it is delicious
MMMMM----- Recipe via Meal-Master (tm) v8.04
Title: Carrot cake
Categories: Desserts
Yield: 12 Servings
4 md Carrots
1/2 c Chopped nuts
2 c Flour
1 1/2 ts Baking soda
2 ts Baking powder
2 ts Cinnamon
1 ts Salt
2 c White sugar
4 Eggs
1 1/2 c Salad oil
1 sm Can crushed pineapple I used
19 oz can
1/2 c Raisins
MMMMM-------------------CREAM CHEESE FROSTING------------------------
1 sm Pkg cream cheese softened
1/4 c Softened butter
2 c Icing sugar
1 tb Marmelade
Preheat oven to 350 Grease and flour 10 inch bundt or 9 x 13 pan Peel
and grate carrots about 2 cups Add nuts and raisins to carrots and
set aside Measure dry ingredients into a large bowl and set aside mix
well with a fork Beat sugar and eggs. Add oil and beat well. Pour
oil mixture over dry ingredients and mix well with spoon. Stir in
shredded carrots, nuts, raisins and drained pineapple. Pour batter
into pan and bake at 350 for 45 to 50 minutes or until wooden pick
comes out clean. Cool 15 minutes before removing from pan
Ice with Cream cheese Frosting
Cream together cream cheese and butter. Blend in icing sugar and beat
well. Stir in marmelade. From Sweet Mania Cookbook typed by
