And for a very simple reason - maths deals with things like Aleph-null
sets, denumerable lists and other infinities. Biology, quite simply,
doesn't. Maths is an abstraction over an arbitrarily large domain,
biology is restricted to a time, space and to physical possibilities.

This is, for example, why species are individuals (bounded in space and
time) not classes (not bounded), and why we do not have universal laws
in biology concerning things like DNA or metabolic processes, except
where they are fundamental physical properties (like thermodynamic
dissipation). Biology is history.
