All you need to do is remove the voltage regulator (it's internal in most
modern automotive alternators) and supply 12 VDC directly to the field.
You'll find that one of the brushes is grounded, the other goes to the
regulator. Bring that lead outside the alternator and connect it to a reostat
and adjust it for your desired voltage output.
You'll need an automatic regulator if you're to run this thing with a
windmill, but that should be quite simple to design and lash up.
