"Grass" is Cockney rhyming slang - "Grass in the park"
= nark, or informer.

A "supergrass" is a grass (informer) who has major significance. 
At one time in Northern Ireland terrorist trials were held without juries
because it was felt that they were too easy to intimidate, and often a
judge sitting alone would convict on the evidence of a
"supergrass" alone.

It later turned out that some of them were just settling old scores and
using the criminal justice system to do it.
