Bryan, I stayed at The Galapago Inn, but we did a dive on the beach
at La Cieba. There is a twin engine airplane wreck in 35' water right
at the La Cieba hotel that is real nice. For deep dives, I highly
recommend Palancar Reef (there are several sites there), and
Santa Rosa Wall. In fact, I consider these to be the BEST sites
in Cozumel. Talk to your divemaster when you get there and sign up
for dives, and request Palancar Caves and Santa Rosa Wall. These
are relatively deep-60 to 100+ feet, so you will need two days to 
see both. When we were there last year, we liked them so much, we
requested repeat dives there instead of another site. Good Luck
and have a GREAT time.
PS - the humidity is very high and your dive gear never gets totally
dry, especially if you make both day and night dives. Because of this,
I recommend you bring anti bacterial wetsuit shampoo to clean your
swimsuit, diveskin, and booties. Try to find time to clean your
booties with the chemical every day or they get really gross after
a few days.
