I eat them raw or half-raw on a regular basis.  Raw in Steak Tartare and
semi-raw (half-cooked by the hot pasta) in Spaghetti Carbonara.

I also like pink chicken.  The salmonela risk is minimal to a reasonably
healthy adult - small children and geriatrics have to be careful.
