 Don't forget to tell him to remove the little black strip that runs the
 length of the crawdads tail after shelling.  A nice waitress in a
 roadside restaurant just outside of New Orleans on the way to Morgan
 City asked this dumb yankee if he had ever eaten them before.  When
 replying in the negative, she let me know they would taste much better
 without that strip. I forgot whether it was the liver or guts, but
 pulling it out first, did improve the taste tremendously.
