we had something similar for our public access word processing boxes back
before we had internet access. now;

- the machines are on the internet; they're already at risk for that stuff
- client antivirus software on each machine, updated weekly (+-)
- separate network segment for public access machines; cabling, router
  accesscontrol lists, and firewall devices separate it; traffic is only
  allowed to go OUT to the internet
- the public access boxes are secured thru a combination of user profiles,
  system policies, and directory and file access permissions. the purpose
  of which is mostly to keep users from changing/modifying the machine, but
  also makes it harder for some types of viruses to infect
