In fish processing plants they have a kind of guillotine (sp?) that cuts
he
fishes' heads off in a quick shot, supposedly the most humane way to do it.
can also remember as a youngster being told that the first thing to do when
cleaning a fish (like a trout or bass or something else you've caught for the
purpose if consuming) is to sever the spinal cord by cutting the head off.
That way if the poor critter is still alive it won't feel what is about to
happen to it. Depending on the size of the sick or injured fish, this may
ot
be feasable. I'd still go with scalding hot water.
