Doubt I'm suggesting the most refined approach, but it could serve at least 
as something of a take-off point for you:
I'm going to do "specimens" on my own (or plan to), and only then propose 'em 
to a putative client.  Seems to me, for example, there's probably a pretty 
decent local restaurant you patronize -- where the menu is far short of what 
it could be.  You might do a version that looks right, then show it to 'em -- 
after maybe a little preparatory work noting unfortunate constructions, 
grammatical failures, and the like.
Indeed, you might do such a thing (depending on circumstances) with 
fictitious descriptions of preparations, noting that consultation would be 
necessary in order that a "final" be done as it should.
OTOH, it strikes me that you might do a super-hot-shot version and point out 
you'll be getting $xxx for such work, _but_, in return for their allowing you 
to show it off as a sample of your work, you'll give it to 'em free.  (Later 
updates, presumably, would carry a price.)
One way or another, this sort of thing ought to get you a start of some kind. 
 You may well want to add other arrows to the quiver too, of course. But, 
again, depending on context, a range of on-paper ad campaign materials might 
be tied in to a menu.  And as that gets under way, participation in a local 
business association could provide avenues for broadening the field. Other 
DTP functions for other client-types.
I note you're in (or your BBS is in) south suburbs.  I'm a little west. We're 
near each other, but not near enough to be competitive.  I'm still unable to 
locate a reasonable DTP mailing list (listserve group); you know of any?
As an educator, you may be Mac-oriented while I'm DOS-based.  Nevertheless, 
we just might be able to exchange more useful scoop now and again.  How far 
south (southwest?) are you?  I'm 6400 due west -- just off Lake Street.
