      Yield: 4 servings

1 Onion; sliced in 1/2" strips
      2 Green peppers
           - sliced in 1/2-in strips
1/2 lb Rib eye or round steak
           - sliced 1/8-in thick
    1/2 c Beef stock
    1/2 ts Sugar
    1/2 ts Cornstarch
      3 tb Vegetable oil
           Salt and pepper to taste

This quick and hearty Philadelphia favorite features tender strips of
beef in a savory sauce. It's especially good with noodles or can be
eaten on a crusty roll as "street food."

MIX STEAK STRIPS WITH STOCK, sugar and cornstarch in a bowl. Saute
onion and peppers in 2 tablespoons oil until softened. Remove from
pan. Add remaining tablespoon oil and beef and liquid. Saute until
beef is no longer pink. Return the vegetables to the pan and heat
through. Add salt and pepper to taste.
