In some parts maybe. The only time I drove to Alaska the AlCan was gravel for
long stretches. Hard on tyres. But I understand -- it's hard to build stable
highways on permafrost.
I do OK on mileage - 25 with the Beemer, 21-22 with the little pickup and 50+
withe the motorbike. Bv)=

Title: Pimento's High-Mileage Pesto Italian Meatballs
Categories: Beef, Pork, Cheese, Sauces, Herbs
Yield: 3 servings
1/2 lb Ground beef *
1/2 lb Italian sausage
1 c Seasoned breadcrumbs
1/2 c Water
1 lg Egg
1/4 lb Grated Parmesan
1/4 c Pesto
1 ts (ea) salt & pepper
1 ts Dried, crushed oregano or
- Italian seasoning mix
* You can use ground turkey but I think ground turkey
is gross -- Pimento
Mix all ingredients together in a large bowl; start with
a spoon, but finish by kneading it with your hands so you
get everything very evenly mixed together.
Line a cookie sheet with parchment paper, then use a 1/8
cup measuring cup to scoop out the meat mixture and roll
with your hands into a ball. (This is a perfect-sized
meatball: not giant, not bite-size, but in between).
Bake for 20 minutes at 400°F/205°C and promptly remove
from the pan.
Like most everything I cook, this makes a big batch so
there are plenty of left-overs for lunches and post-run
or workout snacks. The first night I usually serve them
with pasta, red sauce, and a salad or other vegetable,
but they are fantastic to use for meatball subs, too.
Make these the day before, then throw them in the
CrockPot in marinara a couple hours before dinner time
and serve with cheese and rolls for make-your-own
meatball sliders.
Fast, easy, satisfying, cheap, good for several meals -
these balls do it all. Enjoy!
