The food was decent, though. I noticed that they
decided to compensate for the lack of thighs by
giving us double scoops of cole slaw. It was
amazing that we didn't blow the doors off your
truck. I had five backs - turns out they were a
mix of fresh and frozen, though the place claims
that their chicken is never frozen. I'm guessing
that the backs hang around longer than other
parts, so they dump them in the freezer now and
again. Thighs are my favorite part, but backs 
come in second, because they have the oysters
and the kidneys and the tails. Lucky Wishbone
took off the kidneys and tails, sad to say.

SWSRN (SWMBO to me) needs to take a bunch of trips
this year to make status. I suggested she visit you 
once or twice, because owing to a peculiarity in
the system, she can earn American credit better on
Alaska than on American, just so she flies first
class, which she often does.

Pressure cooker beef rendang
cataegories: main, Indonesian, Singaporean, sellout
servings: 6 to 8

100 g Grated coconut
3 Tb Extra virgin coconut oil
800 g Shin beef, cubed
1 pk Beef rendang pre-mix
2 stalks Lemongrass, bruised
400 ml Coconut milk
1 pc Tempeh, cubed
8 Kaffir lime leaves, chiffonade
2 Turmeric leaves (optional)
2 Tb Tomato paste
Gula Melaka (palm sugar) to taste

In a wok, fry grated coconut in 2 Tb oil until 
nicely brown. Pound to make kerisik.

In a pressure cooker vessel, saute beef in 1 Tb 
oil until lightly browned. Add rendang pre-mix, 
lemongrass, 1/2 the kerisik, and coconut milk. 
Cover, bring to pressure over low heat, and cook 
30 min. Turn off and let cooker depressurize. 
Open and add Kaffir lime and turmeric leaves,
tempeh, and remaining kerisik. Bring to a simmer 
over medium heat and add tomato paste and sugar.
Correct seasoning. Close lid and allow to slow 
cook for 10 min to meld flavors. Serve hot.

Better if it is kept overnight and reheated.
