Pressure cooker beef rendang cataegories: main, Indonesian, Singaporean, sellout servings: 6 to 8 100 g Grated coconut 3 Tb Extra virgin coconut oil 800 g Shin beef, cubed 1 pk Beef rendang pre-mix 2 stalks Lemongrass, bruised 400 ml Coconut milk 1 pc Tempeh, cubed 8 Kaffir lime leaves, chiffonade 2 Turmeric leaves (optional) 2 Tb Tomato paste Gula Melaka (palm sugar) to taste In a wok, fry grated coconut in 2 Tb oil until nicely brown. Pound to make kerisik. In a pressure cooker vessel, saute beef in 1 Tb oil until lightly browned. Add rendang pre-mix, lemongrass, 1/2 the kerisik, and coconut milk. Cover, bring to pressure over low heat, and cook 30 min. Turn off and let cooker depressurize. Open and add Kaffir lime and turmeric leaves, tempeh, and remaining kerisik. Bring to a simmer over medium heat and add tomato paste and sugar. Correct seasoning. Close lid and allow to slow cook for 10 min to meld flavors. Serve hot.
