It does seem to work out that way. I'm lucky, I sorta have 2
garden seasons a year. Here in Florida quite often the best time
to garden is in the fall. So I get a second chance on tomatoes
and those kinds of thing.

I usually leave mine in a rubbermaid container somewhere and just
chill then a real short time before serving when I want fresh
slices.  I just slice then and put them in the frig for maybe
half an hour, that works out ok.   But as you say they will keep
longer in ther frig, just won't taste so great.

I like frozen veggies a lot better than canned ones. I think ones
like broccoli and cauliflower freeze pretty well.  Sometimes my
green beans freeze well and then sometimes come out soggy, but I
think part of that problem is the variety. Also the pole beans
seem to freeze better.

I have a good recipe for a pork stew that uses brussel sprouts.
But I have a terrible time growing the darn things. I just don't
get enough cold weather here in Florida to make sprouts, get nice
plants but tiny, tiny sprouts!   Sometimes I could use a
magnifying glass to find them.
