Chermoula
categories: airline, spice, Canadian, Moroccan
yield: 3/4 c

2 ts cumin seeds
1 ts coriander seeds
2 cloves garlic, chopped
1 ts coarse salt
1 lemon, juice and zest of
1/4 c olive oil
1 ts crushed red peppers
1 1/2 c (packed) chopped parsley
1 c (packed) chopped cilantro or mint
1/3 c olive oil

Dry roast cumin and coriander seeds in a frying pan
over medium heat until aromatic and lightly browned.
Cool slightly and grind with a mortar and pestle.

Place all ingredients except 1/3 c oil in a processor.
Blend to a coarse puree and then add remaining oil
and pulse to combine.
