I never understood the appeal of adding sugar or worse, marshmallows.

Whether baked or mashed they are good with melted butter and cayenne
pepper or some other form of chile.

I like them diced and used as the primary vegetable in either a spicy
Caribbean style meat stock and tomato juice based soup or a gingery
Indian style curried soup with yogurt and tomato sauce.
