I bought a MiniDV camera and my hope is to be able to fetch video from that
over a FireWire cable, perform some simple editing and perhaps captioning
on a computer and then burn the resulting (presumably MPEG) file onto a
recordable DVD to send overseas. It's either that or I ship my parents an
8mm projector and some cinefilm of their grand-daughter ;-)

There are certainly some applications where streaming is appropriate.
Sadly I see it used a lot where I would prefer to just download an MPEG-2
or MP3 file.
Streaming is based on the assumption that you have the band
-width required at the same time and place that you want to
view or listen to the content. In my case that's rarely true: In the car
I have time to listen to content, but not the bandwidth to stream it. In
other places, I have plenty of bandwidth to stream content, but no time to
stop and listen to it. MPEG, MP3 and QuickTime files let me decouple the
action of downloading content from the act of viewing or listening to it.
