Title: Hummus

Yield: 10 servings
2 cn (15oz) garbanzo beans (chick
Peas)
1/3 c To 1/2 cup lemon juice
4 ts Olive oil
2 cl Garlic, crushed
1/4 c Chopped fresh parsley
1/2 ts Paprika
Drain garbanzo beans, saving 1/2 cup liquid. Set aside 1/4 cup beans,
puree remainder in blender or food processor with lemon juice. Add
about 1/4 cup liquid; add additional liquid slowly as necessary to
attain spreading consistency. Stir in oil, garlic, parsley and
reserved whole beans. Refrigerate for 2 hours to blend flavors.
Sprinkle with parsley before serving. Yields about 4 cups or 10 to 14
servings.
