Because they don't hide next to leaves?  Most forest mammals probably 
sit next to trunks or scrabble around in/on the soil.  Hence, being 
trunk/soil coloured makes more sense for camouflage.  Others only come 
out at night, which is not terribly green either.

Other mammals probably don't bother with camouflage - they have 
different protective mechanisms (like running away very quickly).
