You can do this with JFS volumes.  The can be expanded on the fly.

You can't convert HPFS to JFS, but since you are running eCS, LVM gives
you pretty much full control of your drive letters and makes this kind of
conversion easy when you have some free disk space.

It's simple to boot from the install CD, create a volume to hold the data
and copy the data from the old volume to the new volume.  Once you are
satisfied with the copy.  Hide the old volume and change the drive letter
on the new volume and you are good to go.

When you are done, you will have the same drive letters, but their
physical locations might be different and the underlying volumes will be
larger.

You need to do the work booted from the install CD or a maintenance
partition to avoid locked files.
