I went through a similar exercise a few weeks ago. First I made a mistake by choosing a motherboard of which the chipset was(is) not supported! Then I needed to find an alternative (within the limited assortment of my local supplier).... Better do it right first time! in short: For each candidate motherboard you need to check if its chipset is listed in DANIS506.doc (when you have eCS installed in \ecs\boot). Then you have to check if the onboard video chip, or the one on your videocard, is supported by SNAP(/SE). Same exercise for audio and NIC. You can find reviews of all kinds of hardware for eCS in the hardware section of http://www.ecomstation.ru (incl mine about an ASRock board). For the MB I choose the ASUS A8N-E, mainly because I wanted an AMD Athlon 64 processor (socket 939) and SATA-2, and I found some good reviews there. For video I selected a simple PCI-e card with ATI Radion X300 chip. The onboard NIC works with Genmac, Audio with Uniaud. I don't say this is _the_ best choice, but I'm satisfied (incl price).
