3/4 ts Salt
1 1/2 ts Pumpkin pie spice
1 ts Cinnamon
2 3/4 c Bread flour
1 1/2 ts Active dry yeast
1/3 c Pumpkin seeds, at beep*

5/8 c Water
1/2 c Pumpkin puree
2 tb Malt syrup, molasses or
Brown sugar
1 ts Salt
2 ts Pumpkin pie spice
1 1/2 ts Cinnamon
3 1/3 c Bread flour
2 ts Active dry yeast
1/2 c Pumpkin seeds, at beep*
*Or five minutes before the end of the kneading phase, or work into
dough.
What would Halloween be without pumpkins? What would Halloween bagels
be without a pumpkin flavor? Use pureed cooked fresh pumpkin or canned
pumpkin. the bagels will have a soft orange tint.
