    1/2 md Ripe avocado; peeled, pitted
           - mashed
      4 sl Whole wheat bread; toasted
      1 md Tomato; sliced
      2 tb Fine chopped shallot
    1/4 c  Hummus
 
  Spread avocado over 2 slices of toast. Top with tomato and shallot.
  Spread hummus over remaining toast slices; place on top of avocado
  toast, facedown on top of tomato layer.
