Title: Celery Soup

1 lg Head celery -=OR=-
2 sm Heads celery
1 l White stock *
Bouquet garni
45 g Butter
45 g Flour
600 ml Milk
Pepper and salt
Croutons
NB * May be made with bouillon cube.
Wash the celery thoroughly and cut up the sticks. Cook in the stock
with the bouquet garni until tender - about 40 minutes. The rub
through a fine sieve or mouli-legumes without draining. Make a white
roux with the butter and the flour and add the puree followed by the
milk gradually. Stir until boiling and add seasoning. Serve garnished
with croutons of toast.
