Ok I found the info in my book. The air potato is of the
Dioscorea plant family. Some members of this family ARE edible.
However the wild air potato that we see everywhere is not one of
the edible varieties. My book says that many of the wild species
of air potatoes contain the "poisonous principle dioscorine" and
are therefore inedible.
I found this in a book called "Manual of Minor Vegetables" by
James Stephens who is the State Extension Vegetable Specialist,
associated with the University of Florida in Gainsville.
So hopefully you haven''t been experimenting with cooking them
yet.
