October 26: National Chicken Fried Steak Day

      Title: Humble City Cafe's Chicken Fried Steak & Country Gravy
 Categories: Beef, Sauces, Dairy
      Yield: 4 Servings
 
  1 3/4 c  A-P flour; divided
    1/2 ts (ea) Salt & black pepper
      1 ts Lawry's seasoned salt
      4    Choice cube steaks
      1 c  Buttermilk
           Oil; to pan-fry

MMMMM-----------------------COUNTRY GRAVY----------------------------
    1/3 c  Bacon drippings
    1/2 c  Onion; diced
    1/2 c  Chicken broth
           +=OR=+
      1    Cube bouillon; dissolved
           +=IN=+
    1/2 c  Water; hot
      2 c  Milk
           Salt & black pepper
 
  In a small bowl, mix 1 cup of the flour, salt, pepper, and
  the seasoned salt. Dust the steaks on both sides with the
  seasoned flour. Dip the floured steaks the buttermilk and
  then back into the seasoned flour on both sides.
  
  In a deep skillet, pour the oil to a depth of 1" and heat.
  Fry the steaks in the hot oil until golden brown on both
  sides.
  
  TO MAKE THE COUNTRY GRAVY: In a cast-iron skillet, heat the
  bacon drippings or margarine. Add the onion and saute until
  the onions are soft. Whisk in the remaining 3/4 cup of
  A-P flour, stirring until smooth to make a roux. Cook the
  roux for 3 to 5 minutes. Do not allow the roux to brown.
  
  Add the broth, whisking constantly. Whisk in the milk. Heat
  the gravy over low heat until it thickens, stirring
  constantly. Season with salt and pepper to taste.
  
  Makes 4 servings.
