      Title: Roasted Honey Sweet Potatoes

      Yield: 12 servings
 
      6 md Sweet potatoes; peeled, cut
           - in 1" dice
    1/3 c  Honey
    1/4 c  Olive oil
  1 1/2 ts Salt
  1 1/2 ts Ground cinnamon
    1/2 ts Pepper
 
  Set oven @ 375§F/190§C.
  
  Place potatoes in a large bowl. Whisk together honey,
  oil, salt, cinnamon and pepper; add to potatoes and toss
  to coat. Transfer to a greased 15" X 10" X 1" baking
  pan. Roast until tender, 45-50 minutes, stirring once.
