Filleting is for people who can't prepare fish. It's an art to get it just
right whrn still on the bone, and a lot less loss of fishmeat.
3 weeks ago in Valdez (AK) I saw some of the sportsfishermen bring in huge
salmon, then filleted them for putting on ice to carry it home. But they
nearly threw away 2/3 of the fish with everything still on the bone.
