The shutter speed doesn't affect the depth of field.
When the iris is closed (higher f/number), you'll have more depth of
field. You'll also need more light, OR a slower shutter speed, since
the smaller iris hole doesn't let as much light reach the camera.
Any book about photography would provide several examples and a more
detailed explanation. Look in the library for a how-to book on 35mm
and portrait photography. The same lighting principles apply to
video. American Cinematographer magazine is also a great resource,
even if you aren't able to follow all the details it shows you how
professional movie-makers approach their work.
