I dont' freeze garlic by itself. i just mentioned I had frozen
spaghetti sauce that had garlic in it, and didn't have any
problems with off flavors.  I guess you live in a very different
climate than me. Garlic doesn't keep very well at all around
here. It also doesn't like to grow very well around here. I live
in central Florida. It is very humid here so it doesn't keep long
at room temperature, starts growing mold.  I have tried to grow
it several times and have had NO luck. I think climate is part of
it, but also PH may have something to do with it. I do grow
onions and leeks with no problems. I also have discovered garlic
chives that grow like weeds. Regular garlic usually comes up then
sit there doing nothing and turns an unhappy peaked shade of
green and that's it!   I gave up on growing it years ago.
I guess you have the right conditions for garlic in your area. I
have heard from other gardeners that find garlic easy to grow
too.
