You might want to consider either using one main theme, and one in-
game music.  You wouldn't want the download to be too big. :-)  The
nice thing about staying with the mod format is the size is small
(many songs are < 300kb!), but you'd have to find/port a mod player
for iphone.  I'm sure that libmikmod should compile for iPhone pretty
easily.

Another possibility is to have one song file that has different loop
points where it repeats, and different levels use different song
positions -- that way you have multiple songs using the same
instruments/samples but one file.  This really cuts down on the file
size.  Of course, this would require a special composition for the
occasion....
